What made you decide to become a chef? What is your culinary background?

My mother ultimately influenced my cooking, from helping in the kitchen as far back as I can remember. I was always involved with entertaining family and friends, through creativity, especially around the holidays when family came together. I worked my way up in my father’s restaurant’s from busboy in my early teens to a line cook in high school. Professionally, I pursued culinary arts by attending the Indian River State College Culinary program. I continued my education through apprenticing with numerous chefs in the Orlando area and now have recently joined the Ironwood team.

What are you excited about bringing to the Ironwood team?

I’m excited about bringing a fresh pair of eyes to an already well-established resort, exposing my native Florida cuisine by offering daily local fish specials and using locally grown or influenced herbs and ingredients.

How do you like having iBar and iDeck as an extension of the Ironwood experience?

I personally am thrilled to have the iDeck extension. Now Ironwood can elegantly entertain guests outdoors in the fresh air, meanwhile offering our finest menu selections without having to dine inside. The poolside lake view with our climate seems promising for the winter months.

What is your food crush / guilty pleasure of the moment?

Food Crush? Would have to be “ Steak.” From a juicy medium rare filet melting in your mouth like butter, or a sirloin grilled to perfection. I absolutely love it. Guilty pleasure, being a gluten when it comes to these selections.

Any advice for local aspiring chefs?

“ Don’t let your table grow stale!” Meaning many menu changes do or do not take place due to being complacent. Successful chefs must always evaluate their menu on a quarterly basis, if not more often, to keep up with the ever changing demands of experienced foodies and most of all our guests!
